I have been eating more fruits & veggies since August but only yesterday I checked to see how many per day I should be eating. I am on target with fruit but only 1 or 1.5 cups out of 2.5 cups per day. My problem is that I can’t eat veggies with a lot of insoluble fiber unless I cook the heck out of them.
Any suggestions on how to eat more veggies?
